some of you wondered if I made the cake and the answer is YES
you can do it to, just follow this recipe
Dough: 2,5 dl (about 1 cup) wheatflour , 0,5 dl (about 0.2 cups) sugar, 100 gram butter and 1 egg
Lemoncream: 3 dl water, 3/4 dl (about 0.3 cups) sugar, 1 msk (1 tablespoon) butter and 4 msk (4 tablespoons) cornflour, 3 eggyolks, juice from 1 lemon and zest from 0.5 lemon
Merengue: 3 eggwhites and about 0.5 cup sugar
Mix wheatflour, sugar and butter, add the egg and make the dough. Let it rest in a cool place for about 1 hour. Roll out to fit a pie plate and put some tinfoil around the edges so the dough will stay up during baking. Nibble the bottom with a fork so it does not get bubbly in the oven. Let it rest in the plate about 20 mins before baking. Put in the oven, 225 C ( about 430 F ) for about 10 mins, then remove the foil and bake for another 5 mins.
Mix water, cornflour and sugar in a sauce pan and simmer for about 3 mins. Remove from heat and agg the eggyolks and butter. Back on heat, just simmer, absolutely not boil!!, until it thickens. Let it cool down a bit and add the lemonjuice and zest.
Whip the eggwhites hard, add the suger a little bit at a time. Whip until it's hard enough.
Put the lemoncream on the dough in the pie plate and spread the marengue on top.
Bake in 175 C ( about 350 F ) for about 10 mins
Enjoy!! Sounds a bit tough when reading the recipe but its quite simple doing anyway. I tried to convert as good as I could....any questions? Feel free to mail me :-)

thank you for this recipe, I'll try ... but no guarantee of success! I'm bad in this area ! Bye !! :-)
This post reminds me of when I lived in Germany (while a military wife), how I had to convert all of my recipes to metric measurements!
Yummmmmmmmm, thank you! My husband's favorite pie (he will be thanking you too)! :)
Citronpaj hör till mina favoriter.Ska baka den vid tillfälle. Hemodlade physalis är så goda. Ska prova det igen i mitt nya isolerade växthus i vår.
Kram

Sounds good to me! Yum!
Oh my gosh, that's one of my favorites, too. I'm also a big fan of lemon curd. I'll have to try this. Your photos make it look so delicious, Christina!!
